PatissierPath

Bench. Brief. Bake.

A training programme for the home patissier. Forty-one techniques, weeks woven around the ones your hands have done least, rank exams you bake in your own kitchen — and a coach that turns a failed bake into the drills that fix it.

The programme

A syllabus for the bench.

Five ranks, from Apprentice to Master Patissier. Each one opens on three counters you can read at a glance: days practised, techniques studied, exam sat.

Choose your path

French Classics, Home Baker, Chocolatier or Generic. It decides which techniques fill your library and how your weeks are shaped. Change it whenever you like.

Your week, already woven

Four bench days and one theory day, built from the techniques your hands have done least. Timed drills, rep counts, a five-question quiz.

Drill at the bench

Every technique opens with gram-precise steps and its own list of faults. Run the drill against the clock; three finished drills and it counts as mastered.

Sit the exam

Bake the rank dish in your own kitchen and score it against a written rubric — the app never claims to see the pastry. Pass 80% of the criteria and the next rank opens.

What's inside

Everything a kitchen classroom would give you.

No recipes to scroll past. A library, a plan, a clock, an examiner and a coach — and the record of everything your hands have done.

The technique library

Forty-one techniques across six families, from Pate Sucree to puff lamination and tempered bonbons. Every step written with grams, degrees and minutes.

Faults get named

Each technique carries its own faults, written as the sign you see and the cause behind it — so a bad bake tells you something instead of nothing.

A coach that writes drills

Something cracked, sank or wept? Describe the bake and the coach reads the details, names the cause and writes the corrective drills straight into your plan. Once a week it reads your week and fixes the next one.

The daily quiz New

A short check on what your hands have already done — never on what is still ahead. Five questions, every other day, drawn from the techniques you've actually drilled.

Exams & specialty bakes New

Five rank exams, from a single tart shell to a forty-bun croquembouche. Off the ladder, four specialty bakes — Strawberry Tart, Paris-Brest, Glazed Entremet, Saint-Honoré — open once you've practised what they're built on.

Eighteen medals

Every one of them is earned by something the app can actually see in your record — a seven-day streak, a clean week, a hundred drills. No participation awards.

Five ranks

From Apprentice to Master Patissier.

Each rank has one exam, sat in order. You bake it, you judge it against the rubric, and the app keeps the score honest.

  • Three counters per rank — practice days, techniques studied, exam sat. When all three fill, you're promoted.
  • Written rubrics — six or seven criteria per dish. Judge the eclairs as a set; judge the bonbons a full day after capping.
  • Fail, and the coach takes over — a failed exam hands its details to the coach for a debrief.
Choose your path

Four benches, one syllabus.

Your path decides which techniques fill the library and which family each of the five weekly days leans on.

French Classics

Choux, genoise, mousseline, lamination. The classical repertoire, in order.

Home Baker

Domestic oven, hand whisk, one bowl. Techniques that work in a home kitchen.

Chocolatier

Tempering, shelling, glazing. Cocoa butter crystals before anything else.

Generic

A balanced bench: a little of every family, no specialisation yet.

Medal case

Your bench stays on your device.

No account, no server of its own. The Coach is the one screen that leaves your phone — and before it reads anything, the app tells you exactly what it sends and why. Decline, and the plan, library, exams and medals all keep working with no network at all.
